Open Question: Hunting knife question ?

I just made some black walnut handles for a S&W knife and hatchet combo ( just cause I felt like it ).I've done a lot of furniture and gun stocks but never a knife.So I'm thinking urethane may be too slick of a finish.How about linseed oil ? any ideas ?
